The Birth of 8 Island...
I was born and raised in Hawai'i and one of my fondest childhood
memories was eating a "plate lunch" with my family at Ala Moana,
watching the sunset on the beach.
The plate lunch is what the locals eat in Hawai'i. It is fast, casual
comfort food influenced by the melting pot of cultures found on the
islands -- Hawaiian, Japanese, Chinese, Portuguese, Vietnamese, Korean
and Filipino.
A traditional plate lunch consists of an entree, 2 scoops of rice
and 1 scoop of mac salad. I've kept the local flavor but adopted
some healthy alternatives.
So after years in the restaurant industry and careers at local
restaurants Sushi Tora and Hapa, I am finally going my own way.
The recipes used are my own and from the countless family gatherings
that are the back bone of life back home on the islands.
So come and eat. Or as we say in Hawaiian: Mai e 'ai.
